  • Santoku - the name Santoku means ‘three good things’ - referencing its ability to slice, dice and mince. This makes it a versatile all-rounder suited to preparing meat, fish and vegetables. Most of our Santoku knives have a scallop-edged blade, allowing wafer-thin slices to slide easily off the blade.
  • Yanagiba - Yanagiba blades are long and thin. They’re traditionally used for slicing through boneless fish without damaging the ingredients - making them perfect for sushi and sashimi. Their shape, length and superb slicing power also make them ideal for carving.
  • Usuba - the Usuba has a cleaver-style blade, designed specifically for slicing vegetables and fruits. It’s made for precision cutting, allowing users to make thin, even slices. The tall blade also allows for better handling, ideal when slicing thicker vegetables. 
  • Deba - a Deba knife has a tall, heavy blade that makes slicing through proteins trouble-free. It excels at perfectly preparing fish and filleting chicken and meat.
